Butter Chicken Recipe – How to make Butter Chicken

This dish is the most popular dish in whole of India and known in the whole world. Its enjoyed by everyone from kids to adults. Its basically eaten with Naan and can be enjoyed with Jeera rice too.

Chicken is marinated for several hours in a mixture of lemon juice ,youghut ,Kashmiri red chilli, salt, garam masala and ginger garlic paste.

The chicken is usually cooked in a tandoor (traditional clay oven), but may be grilled, roasted, or pan-fried. It is served in a mild curry sauce that includes butter. The sauce is a tomato- and onion-based sauce that is simmered until smooth and much of the water has evaporated

Ingredients for butter chicken
400 gms chicken with bone
Kashmiri red chilly powder
Crushed fenugreek leaves
1/2 tsp Turmeric Powder
1/2 tsp garam masala
1/2 tsp coriander powder
Fresh Curd
3-4 cloves, 1 bay leaf, 4 green cardamom , 1 cinamon stick
Butter
10-12 cashewnuts
Lemon Juice
Charcoal

Method to marinate the chicken for chicken tikka.
To make the tandoori chicken or chicken tikka, we need to marinate the chicken twice with different ingredients. Lets start with the first Marination.

First Marination
1- Wash the chicken properly and add ginger garlic paste , pinch of salt , 1 tsp lemon juice. Mix it all togther and keep it in the refrigerator for 1 hour.

Second Marination.
1- In a bowl add 3 tsp mustard oil , 2 tsp kashmiri chilly powder. Mix it nicely for 1 minute.
2- Add 1/2 tsp turmeric powder , 1/2 tsp coriander powder ,1/2 tsp garam masala, salt , curd and mix it all well.
3- Now heat a charcoal on the gas flame. Keep a steal bowl on the chicken. Keep the charcoal add two cloves and pour ghee over the charcoal. Cover with a lid and let it smoke for 10 mins.
4- Carefully remove the steel bowl and Let the chicken marinate at least for 4 hours or overnight. I kept it overnight.

Method to make the Makhni Sauce.
1- Heat a thick pan.
2- Add 1/2 kg rougly chopped tomatoes, 1 small onion roughly chopped, ginger , 3-4 garlic cloves , all the whole spices, handful of cashewnuts, 1 tsp sugar , 1/2 tsp salt, 2 tsp kashmiri chilly powder , 50 gms butter and add 3 cups water. Cover with a lid and cook for 20 mins. Cool the mixture completely.
3- Grind it into a fine paste and strain it in a bowl.

Method to make tikkas.
1- Heat a non stick pan and add oil.
2- Cook the marinated chicken each side of 3-4 minutes. Dont turn the chicken often. Let it cook nicely on one side and only then turn to cook the other sides.
3- Once cooked take out the chicken in a bowl.

Method to make the butter chicken
1- Heat a pan and add 50 gms butter and 2 tsp ghee.
2- Add ginger garlic paste and 2 tsp kashmiri chilly powder.
3- Add the makhni sauce and stir it well. Cover with a lid and bring to a boil. Add crushed fenugreek leaves.
4- Add the chicken tikkas and mix it properly. Cover with a lid and cook gor 10-12 minutes.
5- Add fresh cream, mix it well.
6- Garnish with fresh cream and dry fenugreek leaves.
7- Serve it hot with bread of your choice.
