Bagara baingan is a Hyderabad dish that uses young brinjal or baingan and a masala paste with peanuts. I love to have this with dal and rice , you can also have this with Roti or Paratha. Try this easy bagara bainga at home, you surely won’t be disappointed.

Ingredients to make Bagara Baingan.
Small brinjals 600 gms
Fresh Coconut 100 gms
Peanuts 50 gms
Sesame seeds 1 tsp
Cumin seeds 1 tsp
Elaichi 2
Cinamon Stick 1
Cloves 2-3
Coriander seeds 2-3 tsp
Onions 1
Tomato 1
Tamarind pulp 3-4 tsp
Coriander powder 2 tsp
Red chilly powder 2 tsp
Coriander leaves
Turmeric Powder 1/2 tsp
Salt as per taste
Method to make Bangara Baingan
1- Heat a pan and roast Grated coconut , peanuts , sesame seeds ,elaichi , cinamon stick , cloves , coriander seeds. Cook all the spices for 1 minute. Once done add the spices in a grinder
2- In the same pan add 2-3 tsp oil and cook tomato and onion. Once tomato and onion are cooked, transfer it in the grinder with roasted spices. Add 1/2 cup water and grind it all together and make a nice paste.
3- In a kadhai or pan add some oil and fry the brinjals well. Once brinjals are semi cooked add the onion, tomato and spice paste. Mix it with the brinjals well until combined.
4- Add 1/2 tsp turmeric , 1 tsp coriander powder , 1 tsp red chilly powder salt as per taste and tamarind pulp.
5- Cover with a lid and cook until oil is released from the gravy.
6- Garnish with coriander leaves and serve it hot.
