Rice cooked with coconut milk and aromatic spices in a pressure cooker. Its a very famous dish made in South India. You can have this with any curry, however it goes really well with a non veg curry.

Type – Rice
Ingredients to make coconut Rice
2 Cups rice
Fresh coconut milk 3 cups
Water 1 cup
1 cinnamon stick
1 bay leaf
2 green cardamom
1 onion finely sliced
1/2 tsp sugar
2 tsp salt
Method to make Coconut Rice
1- Heat a pressure cooker and add 3 tsp oil.
2- Add all the whole spices and cook for 30 seconds.
3- Add onions and cook until soft.
4- Add salt and sugar.
5- Add washed rice and mix.
6- Add coconut milk and water. Mix it all well.
7- Close the cooker with a lid and pressure cook for 1-2 whistle on a medium flame.
8- Turn off the gas and let the cooker depressurize naturally.
9- Enjoy with a nice chicken curry
