Lauki Kofta Recipe – How to make Lauki Kofta

Lauki kofta is a light tomato-based delicious gravy dunked with koftas made from bottle gourd (lauki or ghia or dudhi).

Ingredients to make Lauki Kofte Curry.
500 gms Lauki
3 Medium Onions
2 Tomatoes roughly Chopped
Chilly powder
Garam Masala
Coriander powder
Salt
Tumeric Powder
Chopped Coriander Leaves
Green chillies finely chopped
Carrom seeds
Asoefetida
Cumin Seeds
Amchur Powder
Dried Fenugreek Leaves
4 tsp gram flour( Besan)

Method to make lauki Kofte Curry.
1- Grate the lauki and squeeze out all the water from it.
2- In a bowl add 1 finely chopped onion, grated lauki , asoefetida , 1 tsp red chilly powder , 1/2 tsp turmeric powder ,1/2 tsp coriander powder , 1/2 tsp garam masala , 1 tsp amchur powder,coriander leaves, salt and 4 tsp gram flour. Add 5 tsp water and make a nice thick batter. Dont add too much water.
3- Make small sized balls and deep fry until nice and brown.
4- In a grinder add , 2 onions , 2 tomatoes , 1 green chilly , ginger , garlic and 3 tsp water. Grind and make a fine paste.
5- Heat a pan and add 4 tsp ghee.
6- Add cumin seeds and let it crackle.
7- Add tomato, onion paste and stir it well.
8- Cover with a lid and cook for 5 minutes on a medium flame.
9- Now add 2 tsp coriander powder , 1 tsp turmeric powder , 1 tsp garam masala , salt as per taste. Mix it all well and cover with a lid and cook for 7-8 minites.
10- Once the gravy releases the oil add water as required and cover with a lid and cook for 8 minutes on a medium flame.
11- Add the koftas, mix it well. Add dried fenugreek leaves and let it cook for 7-8 minutes on a low flame.
12 – Serve it hot with rice or Chapati.
