Ingredients for Punjabi Style Dum Aloo
11 -12 Baby potatoes
3-4 medium Tomatoes
2 green chillies( Optional)
10-12 cashew nuts
1 tsp turmeric powder
1.5 tsp kashmiri chilly powder
1 tsp coriander powder
Salt as per taste
1 black cardamom
1/2 cinnamon stick
4-5 black peppercorn
1 tsp cumin seeds
Method to make Punjabi style dum aloo.
1- Wash and pressure cook the baby potatoes for 1 whistle.
2- Once boiled peel the potatoes and prick all the potatoes with a fork.
3- Add 1/2 tsp turmeric powder , 1/2 tsp kashmiri chilly powder , salt and marinate the potatoes.
4- Heat a pan and shallow fry the potatoes till they are golden brown from the outside. Once done take the potatoes out on a plate.
5- Heat a pan and add tomatoes , ginger , cashew nuts, green chillies and 1 cup water . Cook it for 10 minutes until tomatoes are soft and mushy. Once done grind it and make a fine paste.
5- Now heat a pan on a low flame, add 2 tsp oil and add all the whole spices.
6- Add Asoefetida, kasuri Methi , turmeric powder and coriander powder. Mix it all nicely.
7- Add the tomato paste and mix it all until combined. Please keep the flame low.
8- Add kashmiri lal mirch powder and salt.Let it cook nicely on a low flame for 8-10 mins.
9- Add water as required and bring to a boil.
10- Add the potatoes, cover with a lid. Cook for 6-7 minutes. Please do check the potatoes if its cooked completely before serving.
11- Garnish with fresh coriander leaves and Frenugreek Leaves.
12- Serve it hot with rice.
