Smokey roasted eggplant mash with Indian spices, its a very popular dish in North India and usually eaten with paratha. I love to have this for breakfast with paratha and a cup of tea. This baingan ka Bharta recipe is quick , easy and too delicious to ignore!

Ingredients Required for Bharta
2 Large egg Plants
1 large onion
2 medium sized tomatoes
1 green chilly
Ginger finely chopped
Ginger garlic paste
1 tsp turmeric powder
1 tsp cumin seeds
1 tsp kashmiri red chilly powder
Salt as per taste
3 tsp mustard oil
How to make Baingan ka Bharta
1- Put an eggplant on flame or fire to roast
2- After the eggplant turns black and brown remove the skin.
3- Mash the eggplant
4- Heat mustard oil in a pan
5- Add cumin seeds and let it crackle.
6- Add onion and cook until soft. Add ginger and ginger garlic paste. Cook it on high flame for 1 minute, keep stirring.
7- Add tomatoes, salt , coriander powder, turmeric , red chilly powder, kashmiri lal mirch and mix it all.
8 – Keep stirring and cook on a high flame for 1 minute.
9- Cover with a lid and cook until gravy releases the oil.
10- Add mashed egg plant and stir.
11- Allow mix to simmer for 5 minutes.
12 – Garnish with green chillies.
13 Serve with Paratha Or Chapati.
