This is my wifes special chhole recipe which is made without a single drop of oil and it tastes even better.

Ingredients to make Oil free chole without tomatoes and Onions.
1 cup kabuli chana washed and soaked overnight
1 tsp cumin seeds
1 rsp ginger garlic paste
1 tsp garam masala
1/2 tsp amchur powder
1/2 tsp coriander powder
1 tsp kashmiri lal mirch
2-3 tsp of chhole masala
Salt as per taste
Cumin powder 1/2 tsp
1 bay leaf
Pinch of baking soda
Method to make oil free chhole.
1- Make a potli with a muslin cloth add tea leaves, cardamom.
2- Heat a pressure cooker, add the soaked chana with 2 cups of water, add bay leaves, soda and 1/2 tsp salt. Cook it for 2-3 whistles.
3-Let the pressure cooker depressurize naturally.
4- Heat a pan, add the cooked chhole without water.
5- Add ginger garlic paste, Cumin seeds, coriander powder , garam masala, Amchur , kashmiri lal mirch and salt.
6- Mix it all together until all the masalas are cooked.
7- Now add chhole stock and let it cook nicely and until the gravy is thick.
8- Once the gravy is completely dry add kasuri methi and jeera powder.
9- Garnish with ginger juliennes.
10- Serve it hot with jeera rice or poori.
