Palak paneer is my favourite paneer recipe to have or to cook. I just love the way these two power packed items gets mixed together. Full of flavors, you can have this without thinking about your health or weight. Its really nutritious and tasty at the same time.
1- 50 gms spinach
2- 2 tomatoes
3- 2 large onions
4- 1 TSP ginger garlic paste
5- 250 gms paneer
6- 1 TSP cumin seeds
7- 1TSP turmeric
8- 1 TSP red chilly powder
9- 1 TSP kashmiri chilly powder
10- 1.5 TSP garam masala
11- 1 TSP coriander powder
12- Salt as per taste
1- In a bowl boil water and add the spinach to cook. Let it cook for 10 mins. Once cooked take out and blanch it in ice water for 5 mins.
2- Make a paste of onion and tomato in a grinder with a dash of water.
3- Also puree the spinach with a dash of water.
3- Cut the paneer into small cubes and shallow fry in a non stick pan.
4- In the same pan add cumin seeds and let it crackle.
5- Add ginger garlic paste and mix it well. Cook on a low flame.
6- Add tomato and onion paste, stir it and cover with a lid and cook for 5 mins on a medium heat.
7- Add all the spices, stir and cover it to cook well for 5 mins. Add 1 cup water now and cover the pan. Also keep stirring in between.
8- Add shallow fried paneer and stir it for 2-3 mins continously.
9- Add spinach puree , stir it, cover and let it cook for some 15 mins. Keep stirring in between. Add little water if required
10 – By now it will release the oil and your meal is ready.
