Chicken malai tikkas are soft and juicy chicken pieces marinated in loads of cream and Indian spices, ideally cooked in a tandoor.We can even cook this on a grill pan or a normal pan too. Please follow the recipe below.
1- 250 gms chicken breast.
2- 50 ml fresh cream
3- 12-15 soaked almonds
4- 1 green chilly
5- 1/2 TSP green cardamom powder
6- Coriander leaves finely chopped
7- 1/2 TSP garam masala
8- 1/2 TSP black pepper
9- 1 TSP oil
10- Dried fenugreek leaves
11- Salt as per taste
12- 1 TSP lemon juice and ginger garlic paste.
1- Take a chicken breast and cut into tikka pieces.
2- Add ginger garlic paste , lemon juice and a pinch of salt. Dont add too much salt in this marination.
3 – Cover it with a plate or a cling film for 30 mins and keep it in the fridge.
4 – Soak the almonds and heat in a microwave for 2 mins. Peel the almonds and grind it with a chilly.
5- After 1/2 an hour do the second marination with almond paste , salt , black pepper , fenugreek leaves , coriander leaves, Fresh cream , garam masala , cardamom powder and oil. Keep the second marinati chicken in the fridge for atleast 2 hrs.
6- After 2 hra take the chicken and give a mix once and place it in the skewers.
7- Heat a pan and apply butter/oil ans place the skewers on pan, cook on each sides for atleast 5 mins until properly cooked.
8- Please apply butter/ ghee on the each cooked side to keep it soft and juicy.
9- Enjoy the tikkas with a nice mint chutney or sauce of your choice.
